Chicken Fajitas

Ingredients:
4-6 boneless skinless chicken breasts
2.5 cups chunky salsa
1 green pepper, thinly sliced
1 red pepper, thinly sliced
1/2 cup onion, chopped
1 large onion, thinly sliced
soft flour tortillas

Directions:
Place all ingredients except tortillas in a greased slow cooker. Cover and cook on high 5-6 hours or on low 10-12 hours. Just before serving, remove fajita mixture with a spoon and shred chicken using 2 forks.

Roll in tortillas.

Meatballs

Ingredients:
1 pkg frozen meatballs
1 jar grape jelly
1 bottle heinz chili sauce

Directions:
Mix all the above in crockpot. Cook on low for 2-3 hours and serve with white rice.

* This recipe can be "halfed" for less servings, if needed.

Lasagna

Ingredients:
12 Lasagna noodles
1 lb ground beef, browned
1 tsp italian seasoning
1 jar spaghetti sauce
1/4 cup water
1 carton cottage cheese
2 cups mozzarella cheese

Directions:
Break noodles in half. Place half of the noodles in the bottom of greased slow cooker. Stir Italian seasoning into meat and spread half over noodles already in slow cooker. Layer half of the sauce and water, half cottage cheese and half of mozz cheese over beef. Repeat layers. Cover and cook on low heat 4-5 hours. Do not cook more than 5 hours. Makes 6-8 servings.

Smokey Bacon Wraps

Ingredients:
1 lb bacon, each piece cut in half
1 pkg (16 oz) Lil' Smokies
1 cup brown sugar

Directions:
Line cookie sheet with foil. Wrap bacon around Lil' Smokie and place on cookie sheet. Sprinkle with brown sugar. Bake at 400 for 30-40 minutes.

Super Easy Shrimp Dip

Ingredients:
1 pkg cream cheese
1 can drained tiny shrimp
1/2 cup mayo
1/2 tsp onion salt
garlic salt to taste

Directions:
Mix together and chill.

Chocolate Chip Pumpkin Bread

Ingredients:
1/3 cup flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp cloves
1/2 tsp soft butter
1 cup sugar
3 eggs
3/4 cup chocolate chips
3/4 cup pumpkin

Directions:
Mix pumpkin, eggs and butter. Add sugar, stir in spices. Add flour. Stir in choc chips. Place in greased loaf tins. Bake at 350 for 15 minutes.

Quick Creamy Potato Soup

Ingredients:
8 slices bacon
2.5 cups milk
1 cup chopped onion
salt and pepper to taste
4 cups cubed potatoes
2 (10.75 oz) cans of cream of chicken soup
1 tsp dried dill weed

Directions:
In a large frying pan, cook bacon until crisp. Remove bacon, and set aside. Drain all but 3 Tbsp bacon fat from the pan.
Brown onions in bacon fat over medium heat.
Boil / cook potatoes until tender.
Stir together soup and milk until smooth. Add to potatoes. Heat, but don't boil. Add salt and pepper to taste, then stir in dill weed. Crumble bacon, stir in just before serving soup or sprinkle on top to garnish.
* I usually add shredded cheddar cheese to top to garnish as well.

Garlic Red Potatoes

Ingredients:
2 pounds red potatoes, quartered
1 tsp salt
1/4 cup melted butter
1 Tbsp lemon juice
2 tsp garlic salt
1 tsp grated parm cheese

Directions:
Place potatoes in 8 x 8 dish. Combine butter, garlic, salt, and lemon juice. Pour over potatoes. Bake at 350, covered for 30 minutes, uncovered for additional 10 minutes or until done. Sprinkle with parm cheese.

Tater Tot Casserole

Ingredients:
1 lb hamburger, browned
1 pkg frozen tater tots
2 cans cream of chicken soup OR 2 cans cream of mushroom soup

Directions:
Mix hamburger and soup and place in casserole dish. Top with tater tots. Bake at 350 until warm.

Taco Soup

Ingredients:
1 lb hamburger, browned
1 can tomato sauce
1 can diced tomatoes
1 can kidney beans
1 can whole corn

Directions:
Mix all together in crockpot. Cook until heated through.

Banana Bread

Ingredients:
1/2 cup shortening
1/2 tsp salt
1 cup sugar
1/2 tsp baking soda
2 eggs
1 cup mashed bananas
2 cups flour

Directions:
Cream sugar, shortening and eggs. Add bananas. Add flour, salt and soda. Mix well. Put in loaf tin and bake at 375 for 40-60 minutes.

Carmel Marshmallows

Ingredients:
57 caramels
1 can sweetened condensed milk
2 cubes butter
1 package large marshmallows
Box of rice krispies

Directions:
Mix all but marshmallows over heat. Roll mm in above mixture then dip in Rice Krispies (be careful - it will be HOT). Place on wax paper to cool.

Applesauce Cookies

Ingredients:
2 cups flour 1/2 cup shortening
1/2 tsp cinnamon 1 cup sugar
1/2 tsp nutmeg 1 cup applesauce
1/2 tsp salt 1 tsp baking soda
1/2 tsp cloves 1 egg
1 cup chocolate chips

Directions:
Cream shortening, sugar, applesauce, soda and egg. Slowly add flour and remaining seasonings to creamed mixture. Add chocolate chips. Drop by teaspoonfuls onto greased cookie sheet. Bake at 375 for 10-15 minutes. Makes 4 dozen.

Yummy Cheese Potatoes

Ingredients:
6-8 potatoes or 1 bag frozen hashbrowns*
1 chopped onion
1 cube margarine
1 can cream of chicken soup
1 carton sour cream
2 cups cheddar cheese

Directions:
Cook 6-8 potatoes - until almost done. Refrigerate. Grate potatoes like hashbrowns. Put in serving dish.
*I skip this part and just buy the frozen bag of hashbrowns.
In medium sauce pan, melt margarine then add 1 chopped onion. Add cream of chicken sour cream. Cook until bubbly. Pour over potatoes and stir. Top with grated cheddar cheese.

Layered Jello

Dissolve 1 pkg (3 oz) jello in 1.5 cups boiling water.
Whisk in 2 cups frozen cool whip.
Pour into dish and chill until set.

Chicken Parmesan

Ingredients:
Boneless Skinless Chicken Breasts
1/2 cup Parmesan cheese to 1 cup crushed Ritz
2 Cups Sour Cream
Parsley flakes
Garlic salt
1/2 cup Butter
Paprika

Use however many chicken breasts you want. Thaw. Mix sour cream and garlic salt to taste. Spread over chicken and chill overnight, if possible (*I never think that far ahead of time - I do it just before I cook it and it turns out great). Cover with Parmesan cheese and ritz cracker mix. Sprinkle paprika and parsley flakes. Finish by drizzling melted butter over chicken . Bake at 350 for 45 minutes - 1 hour.

Chips Ahoy Cheesecake Sandwiches


Ingredients:
4 oz (1/2 of 8 oz pkg) cream cheese
20 Chips Ahoy Cookies
2 Tbsp sugar
1/2 pkg chocolate chips, melted
1 cup thawed Cool Whip

Directions:
Beat cream cheese and sugar with mixer until well blended. Stir in Cool Whip. Spread mixture on flat side of cookie and top with another cookie to make a sandwich. Dip half of each sandwich in chocolate, shake off excess chocolate. Freeze 3 hours or until firm.

Sour Cream and Onion Chicken

Ingredients:
4 boneless skinless chicken breasts
1.5 cups of water
(1) 12 oz can of cream of mushroom soup
1 packet of onion soup mix
1/2 cup sour cream

Directions:
Place thawed chicken into crockpot or slow cooker. In a medium bowl, mix all the other ingredients together. Pour mixture on chicken and cover. Cook on low for 6-8 hours or high for 3-4 hours.

Baked Lemon Chicken

Ingredients:
4 boneless skinless chicken breasts
1 tsp garlic salt
3 Tbsp butter, melted
1/2 cup bread crumbs
2 Tbsp lemon juice
1/2 tsp salt

Directions:
In a shallow dish, combine the butter, lemon juice, garlic salt and salt. Place break crumbs in another dish. Dip chicken in butter mixture, then coat with crumbs. Place in a greased 9 x 13 dish. Drizzle with remaining butter mixture. Bake, uncovered, at 350 for 25-30 minutes or until juices run clear.

My Other Blog

I decided to start another blog, a food / recipe blog. I am absolutely, in no way, by any means or by anyone, considered a "cook". I get by and my family doesn't complain, get sick or starve. That really is all I can hope for!

I'm starting this blog, as an addition to my regular blog, for a couple of reasons.

1. To consolidate. My recipes are scattered throughout my cookbooks. I'm hoping this will keep me from having to search through them all to find the one I want. They are simple ones, with just a few ingredients and are easy. I am always looking for recipes like these and will add them as I find them. A lot of these recipes are ones passed down from my mom, grandmas and aunts. And, don't get your hopes up - I don't think there will be many pictures.

2. I hope that if you do look at these, there will be something here to help you and make your meals a little easier. And I hope that if any of you have recipes you think someone else would find appealing, that you will pass it along to us.

This blog is really only to make my life easier, and along the way, I hope you can benefit too!
